Bringing Big Game Meat Home

PULLMAN, Wash. -- Hunting season is almost upon us. "Big Game, From Hunt to Home," a new publication being offered by Washington State University Cooperative Extension, will help hunters handle, butcher and store meat correctly.
The 44-page, illustrated publication, covers how to handle deer, elk, antelope and bear meat in the field, including aging, skinning and boning big game. The authors give pointers on food safety as well as marinating and cooking. Several recipes are included. One chapter covers preserving game meat, including freezing, drying and canning.
Copies of PNW 517 "Big Game, From Hunt to Home, " can be ordered from the WSU Cooperative Extension Bulletins Office in Pullman by calling 1-800-723-1763. Cost is $2.50 plus $1 shipping and handling. Washington residents should add 7.5 percent sales tax.
